Fluffy American Beetroot Pancakes
This is my weekend breakfast treat of the month!
When I was little my mum used to make beet-salad with precooked beets. She usually served them along with a reminder of how healthy they are. I have to say I wasn’t a huge fan, but that’s different now! Today, I adore them.
It all started a few weeks ago when I spotted fresh beets in the supermarket. I had no idea what to do with them at the time, but I knew I would find a purpose.
Reviewing my old recipe memo’s, I decided to reinvent my American pancakes in conjunction with the beets, and I can’t believe how good they have turned out.
A few days later I made the first batch and slightly adapted the ingredients further. We’ve had these pancakes 5 weeks in a row now, so just imagine how good they must be!!
The good news is there is a way to incorporate your veggies into a comfort food dish! And… they are seriously, incredibly delicious. Plus these healthier pancakes are quick and easy to prepare! They are whipped up in the blender within a matter of seconds. Your kids, friends and spouse will love them! They are even ‘Philip’ approved. Philip is my husband and a very honest and skeptical judge. I asked him to record this video and he was ever so happy to give me a hand. Later, when I served him the finished product I watched him closely to check if he liked them. I could tell that he was pleased because he couldn’t stop eating, despite his initial agreement to share with me. He even asked me why they turned out purple! I had to remind him, that we incorporated the beets earlier while he filmed me – this told me that this recipe was a winner!
Finally, I was ready to eat my very own portion! They are truly delicious with only a very light, pleasant hint of the beets!
